Toast With This!: Elderflower Lemonade Spritz

Only a handful of days back home from my most recent jaunts to London and Paris and everything--including the longing to return--is still fresh and vivid in my memory.  As I paused to reflect, I realized that this most recent visit to Paris, in particular, marked the fifth over the past 17 years.  And can I let you in on a secret?  It's still my favorite all these years later.  If you've been following the blog for a while, then you know London is also a fond destination and this third time around was as charming as the first over twelve years ago.

So putting my sentiments to the side, momentarily at least, I want to share an ode to the casual, yet sophisticated, sip that takes many variations among the sidewalk cafes and restaurants throughout each destination: the Spritz.

From the Aperol (which recently underwent a heated review, turned debate, courtesy of New York Times Cooking, but which showed no sign of waning across the pond if my observations are any proof), to the St. Germain, and beyond, the Spritz undoubtedly holds its own as a drink of choice. 

I've created a light, effervescent version that's as refreshing as the Summer days are long and the temps are hot--making it an undeniable go-to all season long. Combining Elderflower Lemonade (I like Belvoir's), Prosecco, and Club Soda for an elegant sip couldn't be easier, or more delicious--and the combined bubbly effect is a lovely bonus. 

If you can't be cafe-side in Paris or London, you can still enjoy the same joie de vivre--and toast with this.

Elderflower Lemonade Spritz
Ingredients:
Elderflower Lemonade (or Lemonade combined with an Elderflower Cordial), chilled
Prosecco, chilled
Club Soda

Method:
Pour Elderflower Lemonade into a glass, followed by Prosecco, and topped off with a splash of club soda.  Stir slightly and enjoy!

Toast With This!: Ginger-Tea Lemonade with Basil

There are many ways to welcome the weekend, but a favorite of mine is by enjoying a refreshing mocktail.  I recently came across a delicious spin on the quintessential favorite: lemonade.  This recipe for Ginger-Tea Lemonade with Basil by Giada De Laurentiis is the perfect drink for all things refreshing and delicious--melding the flavors of black tea, sweet basil and warm ginger--and taking your lemonade lovin' to a whole new level!  

So here's to Happy Sipping!

Ginger-Tea Lemonade with Basil

Ingredients:
2 cups water
3 black tea bags, such as English Breakfast Tea
2 cups packed fresh basil leaves
2/3 cup fresh lemon juice, from about 3 lemons
1 cup sparkling water or club soda, chilled
2 cups ice
Lemon slices for garnish, optional
1 ⅓ cups Ginger Simple Syrup (see ingredients list below)

Ingredients for Ginger Simple Syrup:
1 cup sugar
1 cup water
1 (3-inch) piece of fresh ginger, peeled and chopped 

Method:
In a small saucepan, bring the water to a boil over high heat. Remove the pan from the heat and add the tea bags. Stir and allow the mixture to cool to room temperature, about 20 minutes. Remove the tea bags and discard.

For the ginger simple syrup, in a small saucepan, combine the sugar, water and ginger over medium heat. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.  

Lay the basil leaves on a cutting board and cover with a sheet of plastic wrap. Using a rolling pin, roll over the basil to bruise the leaves. Remove the plastic wrap and add the bruised basil to the tea. Pour in the ginger simple syrup and lemon juice. Refrigerate the mixture for 1 hour.

Just before serving, add the sparkling water to the tea mixture. Place the ice in a large pitcher and pour the lemonade over the ice. Garnish with lemon slices, serve and enjoy.

Toast With This!: Arnold Palmer Special

If I had to claim one beverage as my drink, the Arnold Palmer would surely top the list.  A great mocktail that simply combines the beloved drinks of iced tea and lemonade to become one all its own, I can't think of anything not to love about it.  Cool. Refreshing.  Perfectly suited to accompany a casual day-time bite and hold its own at an evening meal.  So my thoughts went rather to how to make it a bit more special.  Nothing too over the top.  Nothing to take away from what made me love it in the first place.  But just a little extra love.  And thus, Arnold Palmer Special was born.  Basically as easy and simple as before, with a little added twist. 

Check out the recipe below to discover what puts the 'special' into this beloved drink.  And once you've tasted it, I'm sure you'll love this twist as much as I do.

Arnold Palmer Special
One Serving
4 oz. sweetened iced tea
4 oz. basil lemonade (aka 'the twist') - recipe follows
Ice cubes for serving
Basil leaves for garnish (optional)  
 
Combine the iced tea and lemonade, pour over ice, garnish with basil and enjoy!



Basil Lemonade
1 cup fresh squeezed lemon juice
2 1/2 cups cold water
1 bunch of basil
1 cup of sugar

Combine basil, sugar and 1/2 cup of water in a small saucepan and simmer until the sugar dissolves.  Once the sugar has dissolved, remove from the heat and cool, allowing the basil to steep in the syrup.  (Note: I like to allow the basil to steep for at least an hour, if time permits).  Strain syrup into a container and chill in the refrigerator.  Discard used basil.

Add the lemon juice, 2 cups of water and basil simple syrup to a pitcher and stir to combine.  Serve over ice and enjoy!
