The Perfect Fried Chicken

 

Over my years of living, it’s fair to say that I’ve relished my share of fried chicken.  Much of my experience came as I grew up and feasted on my grandmother’s and mother’s fried chicken—both exceptional.  


I have so many precious memories of my grandmother hosting a dinner replete with her fried chicken (expertly fried in her cast iron skillet) and whatever else she added to the menu.  It was always clear, to me at least, that the fried chicken was the main event—the star—of the meal.  And if I may go further back in my heritage, she inherited her skills honestly from her mother, my great-grandmother, who won awards and was written up in the local paper for her fried chicken way back in the early 20th century.  





So great, award-winning, exceptionally delicious—dare I say, perfect—fried chicken is in my genes.   I truly did get it from my mamas (great grandmama to grandmama to my mama.)  As I have a way of doing, I’ve slightly adapted my own approach to making “finger-licking good” fried chicken in the years since.  And because it’s not a dish that I make often these days, when I do, it has to be GREAT!  I mean, I can’t be bothered with the additional mess of frying, and the extra calories, for mediocre chicken.  Anybody?


So before I delve into what makes my chicken the fried chicken you never knew you needed, allow me to share the two elements to achieving the perfect fried chicken:


Moist, flavor-filled meat; and 

Crispy, crunchy (and flavor-laden) skin.


That’s it.  


Flavor, crunch, and juicy chicken is what we came for, no?


So without further ado, let’s get into it a few key techniques to make your next batch of fried chicken, your best batch yet.


Getting the Juiciest Meat:


If you’re familiar with my tips for the best turkey, then you know that brining is an essential in my arsenal.  The same applies for the juiciest fried chicken.  A quick (2-3 hours will work) brine in a salt, sugar solution is worth the payoff in making your chicken the most moist and tender bird.  (*Cook’s Note: if you prefer a buttermilk brine, be my guest.  It will work equally well, I just don’t prefer the strong buttermilk notes it infuses into the chicken.)


The Spice Is Right:


As a long-time spice girl, who must have flavor bite after bite, I use my custom fried chicken spice blend to make my chicken unforgettably scrumptious.  The key ingredients are kosher salt, freshly ground black pepper, celery salt, cayenne pepper,  garlic powder and smoked paprika. (*Cook’s Note: I use my spice blend to season both the chicken and the flour mixture for extra goodness.) 


The Perfect Frying Temperature:


For perfectly done, golden brown chicken, you want to fry it at a temperature of 350 degrees F.  To maintain this temperature and to ensure your chicken actually fries to a golden crisp, rather than steams or burns, in the oil, avoid over-crowding your frying pan/pot and keep an eye on the oil temperature throughout. This may require working in batches, but it will be worth it in the end!  Aim for 160 degrees F (dark meat) to 165 degrees (white meat) for perfect doneness.  


Tools to Have On Hand:


I recommend a deep-frying or candy thermometer to measure and monitor the temperature of the oil (sometimes it can cool down a bit as you add in new pieces or unexpectedly get too hot).  I additionally recommend an instant-read thermometer to test doneness.  A baking rack will also come in handy, if you have one available.

Now that we’ve gotten all of that in place, let’s get on to what really matters…

The Perfect Fried Chicken


Ingredients:

Skin-on chicken legs (or whatever cuts you prefer)

Buttermilk

2 cups all-purpose flour or more, as needed

2 tablespoons cornstarch

Quart of canola, vegetable, or peanut oil for frying

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 teaspoon garlic powder

1 teaspoon celery salt

1/2 teaspoon cayenne pepper

1 teaspoon smoked paprika


For Brine:

1/4 cup salt

1/4 cup sugar

Water


*Gauge ingredient quantities based on the amount of chicken you’re frying and adjust accordingly.


Method:

Mix brine solution, add chicken, and brine in the refrigerator for two hours up to overnight.


Remove chicken from the refrigerator and the brine solution. Pat the chicken with paper towels until completely dry and set aside.


Mix salt, pepper, celery salt, garlic powder, cayenne and paprika together.  Mix flour and cornstarch together. Generously season chicken and flour mixture.


Dip chicken pieces in buttermilk, followed by the flour mixture, to coat.  Let chicken rest on a baking rack for 15-20 minutes before frying.


When ready to fry, heat oil to 350 degrees F in a heavy-bottomed pan (like a Dutch Oven) or deep-fryer.  Add chicken into oil and fry until done, approximately 8-10 minutes or so (use your thermometer to test doneness, however!).


Place fried chicken on a baking rack over a baking sheet/tray to drain any excess oil and lightly sprinkle the hot chicken with a bit of salt or more of the seasoning blend, if desired.  


Serve and enjoy!!

5 Essential Tips for Successful Solo Travel

Solo travel can seem daunting for some, but let me assure you that it’s absolutely doable and fulfilling—when done right.  After traveling to four continents and numerous countries, cities and islands as a solo traveler, it’s fair to say that I know a little something about this often avoided way of exploring.


So if you never, or rarely, travel alone, I want to boost your confidence and savvy with five tips for a successful solo journey—because life’s too short to wait around.


1.  Research, research, research.  Although you can’t know everything about a destination before arrival, you can get a major head start by taking the time to research.  From lodging, to dining, to cultural outlets, nightlife, ground transportation, local customs and norms, and more, the more you know, the better.  Not into all that research? Let my travel company, Postcard Travel Boutique, do the heavy lifting for you.


2.  Document and share.  Once your itinerary comes together, be sure to share it with family and/or friends so that they can know your intended whereabouts and monitor your safe comings and goings. This also includes real-time updates and check-ins while navigating your destination(s).


3.  Seek out curated activities that will allow you to safely engage with others, while still enjoying what a destination has to offer.  Hosted tours and classes are really good avenues, among others.


4.  Go at your own pace. One of the biggest ‘wins’ of solo travel is being in complete control of what happens—and when.  Whether it’s sleeping in after a late night, or lingering longer over an art exhibition, there are no rules for enjoying your journey.


5.  Make lots of postcard memories!  And repeat.

5 Essential Tips For The Best Road Trip




Growing up, road tripping was the de facto way of travel for my family. From summer vacations to the beach, to family reunions, and everything in between, if we went—it was a road trip. (In fact, I didn’t board my first flight until I was in college.)

Times have surely changed—for my family and likely most travelers—with the road trip being eclipsed by air travel as the more common way of travel. 

And then came a global pandemic that changed everything. 

Now, as many are preparing to travel this Summer and beyond, the road trip is taking center stage once again as a popular way to go and explore against the ongoing pandemic backdrop. 

If done right, road trips are travel goals for taking in more than a singular destination, going at your pace, soaking in scenic routes and attractions, and bonding with travel companions on another level. 

Here are my 5 tips for making your journey one to remember—for all the right reasons:

1. Know Thyself.
Your travel personality (get there already, stop & smell the roses along the way, or a mix of both) will be key for embarking on a road trip that feels like a joy vs. a cruel sentence. Knowing how you typically like to go and flow (with some flexibility built in for surprising yourself) will put you in a positive space for embracing the journey ahead.

2. What happens in the car—matters. 
One of my most memorable road trips growing up was one where we sang all of Whitney Houston’s new (at the time) album. I knew every song by heart by the time we were done. Talk about fun! So prepare your playlists (music, podcasts, audio books & such) to keep the good vibes in gear. 

3. Food, food and more food. Keep the “hangries” at bay with a good stash of stacks. A mix of healthy snacks (fresh fruits, nuts, popcorn, flavored waters) and indulgences (chips, jerky, cheese and crackers, sweet treats, etc.) can go a long way in between stops and fuller meals. And if you have kids, it's a non-negotiable for keeping everyone sane and satiated. :)

4. Prepare for a safe journey. 
Be sure to check your car, stash a first aid kit, extra gallons of water, chargers and more, before hitting the road. 

5. Add travel resources to your arsenal. 
Roadtrippers, AAA, and other road trip apps, are essentials for seamlessly planning the perfect getaway.

5 Tips for Stress-Free Holiday Travel

 While the prospect of holiday travel can come with excitement and anticipation of enjoying an amazing getaway, it can also bring its unique set of challenges. To help you make the most of your holiday travels (and beyond), here are five tips to keep in tow:

1. Embrace Your Inner Early Bird or Night Owl for Going To and Fro —Planning for very early or very late typically results in lighter crowds and clutter on the road, on the train, or as you’re trying to get through airport security.

2. Pack Light —I’m still working on this one, admittedly, but a lighter load allows for carry-on ease, minimizing the stress (and extra $$) associated with checked baggage in the case of air travel. Plus it’s all-around easier to manuever across multi-destinations.

3. Avoid Tight Connections —Because despite the best laid plans, delays sometimes occur. And nothing shrieks stress like the possibility of missing a connection,

4. Stay Powered Up —If you’ve ever glanced at your phone to see that low battery warning staring back, then you know the angst of not having enough juice for the journey. Make sure your mobile devices and portable chargers are fully powered before leaving home.

5. Get Organized —Gather important documentation, such as passports, boarding passes, itineraries, etc. and keep them organized and easily accessible. In the case of international travel, check sites like the State Department for relevant travel requirements, advisories, country information and related updates.

5 Essential Travel Tips For When You're On the Go Again



When this year began, my travel horizons were higher than ever. For me and for my clients. And things seemed to be going to plan (my first—now only—getaway—was to NYC in late January and it served up special and fulfilling memories on several fronts.) And then a global pandemic changed everything.

Uncertainty, hopes for a soon-to-come rebound to “life as usual,” and heightened impact on the way we come, go, liaise and live, started to emerge. With more than a few cautionary tales that have arisen on the travel and personal safety terrains, in particular, and because the impacts of COVID-19 continue to linger, I’m sharing FIVE ESSENTIAL TIPS for keeping your travels as stress-free as possible and your wanderlust in high gear.

  1. Secure comprehensive travel insurance to minimize the impact of cancellations and other disruptions (e.g. delayed or lost luggage, local healthcare, etc.)

  2. Regularly check CDC and state department sites for travel updates, alerts, restrictions, etc., before and during travel. Also do as much research as possible to understand conditions at your destination (domestic and international).

  3. Practice excellent personal hygiene, take care of yourself, and do your part as a global citizen to foster healthy environments, including refraining from going out while sick. That vacation or event will come around again once you’re healthy and our world is out of the current health crisis.

  4. Dream, plan, and prepare for future travel. Feed your wanderlust regularly and anticipate the postcard memories on the horizon when your travels resume.

And during my career, championing and advocating for inclusion, diversity and equity has been—and remains—at the forefront of my professional experience and mission.

Toast With This!: Cider Mimosas

When it comes to stress-free entertaining, one of my hallmark tips is to serve a signature drink--be it a mocktail, cocktail, or whatever suits your sipping fancy. It does the double duty of marking the occasion, while keeping the effort level low, freeing you up to spend more time with your guests--the ultimate reason we gather, no?

So just in time for your Friendsgiving, Thanksgiving, and all around holiday soirees, I've created a delicious, festive sip that's a grown-up twist on one of my favorite seasonal beverages, apple cider.  And with only four ingredients, it couldn't be easier to make--and toast with--my cider mimosas.

Cider Mimosas

Ingredients:
1 part Chilled Prosecco
1/2 part Apple Cider
Fresh thyme and rosemary

Method:
Pour prosecco and top with cider.  Garnish with fresh herbs and enjoy!

{Travel Like a Pro}: City Life x Public Transit

What do some of the world's greatest cities, like New York City, Madrid, Bangkok, Paris, Chicago, London, and Washington, D.C., all have in common?  Sure, they're all bustling metropolises.  But the common thread of which I hint goes further.

For a traveler who seeks to make the most of her time in a given destination (read: immersion in the local culture and scene--with lots of to and fro), they all share a gem that has been invaluable in making my forays in each city real life #travelgoals. The gem of which I speak is the public transit system that each possesses for getting locals, and visitors, alike, around town in the cheapest (yes, to that!) and often most warp speed, efficient manner (double yes to that!).

In my earlier travel days, public transit was the default because I simply had no other means of regular, affordable transportation at my disposal.  For example, arriving in Spain as a college student, and soon after settling in Madrid to study abroad, meant embracing the metro for my comings and goings--and quickly proved to be an interesting lens into the people and culture in which I was now living.  Ultimately, if not surprisingly, my goal of mobility was met in memorable and often laughable ways.

The following Summer found me similarly planted in Washington, D.C. to take on a stint as a Legislative Aide on Capitol Hill.  It was a dream opportunity in an already favorite city, but the girl had no car.  (In truth, my car was back home awaiting my return, based on a judicious decision thrust upon me by my mama.  She was not about to chance my then still questionable driving skills against the D.C. traffic.)

Living in a dorm room at Georgetown University meant a daily commute that consisted of bus routes that converged into the Metro rail and ultimately got me close enough to 'The Hill' to manage the remaining sneaker-clad trek.  And you know what?  Like Madrid, I couldn't have amassed a better grasp of the city and its unique offerings almost any other way.  Like it or not, I was fully immersed--and truly gained homes away from home. 

Fast forward several years later and the merits of public transport were a distant memory and thing of the past.  In those pre-Uber/Lyft days, I was the taxi cab queen (with an occasional private car and driver added to the mix.)  Beyond the coins that were consumed, I was largely relegated to the destinations in my direct queue and minimally ventured much further beyond to gain broader exposure.  In retrospect, I was happy and loving it, but didn't know (or rather forgot) what else I could have enjoyed.

And I'm proud to say that I eventually shed those ways and once again made public transit my ally for taking in the cities in the immersive manner that has always defined my travel aspirations.  Did it take a bit of courage when navigating on foot, stopping (frequently) to ask strangers for directions or guidance, or deciphering through foreign languages when in Paris and Bangkok, for instance?  Yes, of course.  But the pay offs more than outweighed any inhibitions that I had.  And once I adopted that mindset, it became a natural option, no matter where my footprint landed.

My ultimate local navigation style includes a medley of public transportation (weather permitting, daylight mostly, non-heel wearing goings) and taxi/ride sharing transportation (mostly when the above conditions are reversed.)  I feel like such the "big girl" and local when I'm out there navigating those city terrains and hopping on and off the train.  And then there's the fringe benefit of being more aware of and connected to my surroundings, making my travels all the more fulfilling.

Often the simplest things have the biggest payoff and, in the world of big city exploration and mobility, this is definitely one of them.  If you're not already on the public transit bandwagon, I highly recommend it.

{Be Inspired!}: Decking the Halls!

Last weekend I finally began adding Christmas touches to my home.  And although I'm not quite as eager as some (I have a cousin, for instance, whose decorations are always on full display by the second week of November!), I must admit that once everything comes together, I'm in love all over again (and secretly wishing for a way to keep the decor this way throughout the year.) 

From adorned table tops, to embellished topiary trees, to candles, wreaths and other accents, the smallest to grandest touches make for my very own special space that creates the perfect backdrop for this most wonderful time of the year.

Labor-less Labor Day Eats x Atlanta Plugged In

Summer isn't over yet!! I want to (air) scream this every time I cite a mention of Fall food and flavors these days.  Don't get me wrong, I loveeee the Fall.  It's my favorite season, in fact, but I'm all about celebrating each season to its fullest--and that means relishing the final days of Summer.

Just as Memorial Day marks the unofficial start of Summer, Labor Day tends to mark the unofficial end of this sultry time of year.  And with Labor Day in mind (and on the horizon), I have to share a few, fun recipes to make your entertaining over the long weekend anything but laborious.  Think effortless!

If you follow me on social media (I'd love it if you did--see the easy 'connect' buttons in the right margin. Shameless plug. ;-) ), then you're likely aware that I had the awesome privilege of returning to my favorite, Atlanta Plugged In, earlier this week to share my tips and recipes for making the most of the holiday.


Now that you've watched the segment, I hope you're inspired to try these easy, delicious, and, yes, healthy dishes.  Win, win, win.


And to tie it all together with a big bow on top, I'm sharing a bonus "recipe" in the way of a super fun and effortless sip.  Because there's so much to cheers to and be thankful for.

Peach Caprese Bites
Ingredients:
Fresh peaches, sliced into rounds
Fresh mozzarella, thinly sliced
Prosciutto, thinly sliced
Basil leaves
Flaked sea salt (optional)
Balsamic syrup, for garnish, (optional)

Method:
Arrange peaches, mozzarella, basil and prosciutto in stacks.  Sprinkle lightly with sea salt and drizzle balsalmic, if using.  Enjoy!

Roasted Shrimp and Pineapple Skewers
Ingredients:
Shrimp, peeled and deveined
Fresh pineapple
Old Bay Seasoning
Kosher Salt
Freshly ground black pepper
Olive Oil  
Brown sugar 
Cilantro
Fresh limes  

Method:
Preheat oven to 425 degrees F.

On a baking sheet, toss together shrimp, seasoning, a light sprinkling of salt, freshly ground pepper and olive oil.  Roast in preheated oven for 5-6 minutes.  Set aside.

On a separate baking sheet, toss together pineapple, brown sugar, salt, pepper and olive oil.  Roast for 15 minutes in preheated oven. (*Cook's Note: Shrimp and pineapple can be prepared a day ahead and served at room temperature, if preferred.)

Add roasted shrimp, pineapple and cilantro to skewers.  Garnish with more chopped cilantro and fresh lime juice.  Enjoy!

Watermelon with Chili-Spiced Salt
Ingredients:
Fresh watermelon slices or chunks
1 tablespoon kosher salt 
1/2 teaspoon chili powder 
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (or less, to taste)

Method:
Add salt and spices to a dish and stir well to combine.  Sprinkle over melon, serve and enjoy! (*Cook's Note: leftover salt can be stored in an airtight container in your pantry.)

Cotton Candy Sparkler
Ingredients:
Cotton candy
Sparkling drink of choice (cider, prosecco, champagne, etc.)

Method:
Pour sparkling beverage in glasses.  Top with cotton candy.  Toast and enjoy!

The Hotel Concierge: A Savvy Travelista's Best Ally

The hotel concierge.  Outdated?  Non-essential?  Think again.  A good hotel concierge is worth his or her weight in gold…and can become a Travelista’s best ally for making the most out of what your destination has to offer.

After check-in and settling into my digs, the concierge desk is typically one of my first stops for embarking on my travel adventures.  Not recommended to displace your own research, local foraging and adventure, a concierge, instead, can serve as an added resource in your travel arsenal.

The best concierges have an exceptional network and well-rounded grasp on the local area—from the best restaurants, to entertainment venues, to sporting events, shopping, local tours—or whatever it is that you have a desire to experience during your journey.
 
For instance, when I traveled to London for the first time, I knew that my first meal upon arrival would be fish and chips.  However, to ensure I was going to enjoy the best fish and chips London has to offer, I consulted my concierge and within minutes was on my way to experience an authentic and delicious meal—that didn’t disappoint.   Along with recommending places to nosh, concierges will usually make reservations for you and your party.  It works because there’s an obvious vested interested for all parties involved (you, the hotel brand and the restaurant) to ensure your experience is second-to-none.

Beyond dining options and assistance, concierges are great for helping to secure tickets to sporting and entertainment events.  This was a big bonus when I wanted to attend the French Open during one of my trips to Paris.  My wish became my concierge’s command—and the rest was history.  Hassle-free travel at its best, I like to say.

I also typically prefer to book local tours and excursion packages through the concierge desk, rather than in advance.  I find the additional “insider knowledge” that a concierge brings to guests to be a welcomed plus in choosing from the myriad choices presented by local operators.  There’s just something reassuring about having the input of someone who does it day in and day out.



If you’ve already mapped out the majority of your travel agenda and related details prior to arrival, a concierge can still be invaluable for assisting with the best driving and/or public transportation routes, private cars, maps and other lesser travel matters.  They’ve even been known to provide an umbrella when needed! 

In essence, a hotel concierge represents an extension of your travel savvy resources, which makes experiencing a destination in its fullness a true delight, without any extra heavy lifting.   So the next time your accommodations include a hotel stay, remember to keep your concierge top of mind and make the most of your newfound ally!

For those who know me, they will attest that having a sharp outerwear wardrobe ranks high on my style aesthetic.  From capes, to vests, to coats, to blazers, and more, the right pieces can totally make your look--or even be your look.  (Yes, I ascribe to the 'wear your coat' philosophy.)  Even the most casual and mundane looks can be instantly elevated into style perfection with the right outerwear.  And nothing could be truer when it comes to the world of trench coats.  I like to think of them as quintessential style pieces that belong in everyone's (especially every style maven's) closet.

{Put an Egg on It}: Recipes, Cooking Techniques & More!

Welcome to the wonderful world of eggs!  Boiled. Baked. Scrambled. Poached. Frittatas. Omelets. (Okay, by now you get the picture.)  The incredible, edible egg is indeed one versatile and mouth-watering star ingredient fueling some of our most delicious dreams. 

I, for one, have taken to incorporating them into my diet more since the new year debuted (the boiled variety is a favorite for protein-fueled breakfasts and snacking).  But did you ever consider that when it comes to preparing them, technique is involved?  Well, there is.  And today's post is dedicated to all the egg-noshing, technique, and etiquette savvy, that I can muster.  If you're like me, you'll soon be saying, 'put an egg on it!'. 

Recipes ~
