Grilled Shrimp Lettuce Wraps


Frozen shrimp has always been a go-to staple in my freezer--and especially so during the quarantine, shelter-in-place, days of late.  Besides going from frozen to thawed within minutes, there is something comforting about knowing that you've got seafood virtually on-demand and waiting to be transformed into as many delicious iterations as your imagination can muster.

So this past Sunday, after a morning walk, followed by an online worship service, and re-watching Hamilton (squeal!), my mind went to what's for dinner.  And in keeping with my already low-key Sunday vibes, I decided to keep it simple.

What resulted was simple in preparation, indeed, in that I had all of the ingredients on hand in my fridge, but by no means simple in final wow-appeal and delicious-ness.  Translation: it. was. so. good.


Grilled shrimp (I grilled my shrimp on my indoor smokeless grill for extra ease), lettuce leaves to serve as the bed and wrap, piquant scallions, juicy grape tomatoes, hothouse cucumber slices, and a punchy lime vinaigrette, made for one good 'til the last bite creation.  The lightness of the dish (perfect for Summer) x the big flavors made this an instant favorite.  It's a gorgeous meal-in-one that can double as appetizers or a main course, depending on whether you're hungry or hangry. :)

Grilled Shrimp Lettuce Wraps
Ingredients:
Shrimp, peeled and deveined
Kosher Salt
Freshly Ground Pepper
Old Bay Seasoning
Worcestershire Sauce
Tabasco
Olive Oil
Lettuce leaves (Boston or Bibb, recommended)
Grape tomatoes, halved
Scallions, chopped (white and green parts)
Hothouse cucumber, thinly sliced
Lime Vinaigrette (recipe follows)
Flaked sea salt for garnish (optional)

Method:
Place shrimp in a bowl and season to taste with salt, pepper, Old Bay, Worcestershire, Tabasco and oil; toss ingredients to combine. Grill shrimp until just done about 2 minutes or so per side. While shrimp is grilling, prepare vinaigrette.  Once done, remove shrimp and drizzle with some of the vinaigrette.  Toss to coat and set aside.

Arrange lettuce, tomatoes, scallions, cucumber and shrimp on a platter.  Place remaining vinaigrette in a dish/bowl and add to platter.  Garnish with a light sprinkle of flaked sea salt to finish, if using.  To assemble, place cucumber, tomatoes, shrimp and scallions on lettuce leaf.  Garnish with a drizzle of vinaigrette to finish--and enjoy!

Lime Vinaigrette
Ingredients:
Juice of 1 lime
Teaspoon of Dijon mustard   
1/2 teaspoon of honey
Kosher salt and ground pepper to taste
1 Tablespoon of Extra Virgin Olive Oil  

Method:
Whisk together lime juice, mustard, honey, salt and pepper.  Drizzle in oil and whisk until emulsified and fully incorporated. (Cook's Note: I like my vinaigrette with a good acidic punch so I typically use less oil than is standard.  Feel free to modify with more oil, as desired.  And you can also double the original recipe for more vinaigrette. Store remaining vinaigrette in an airtight container in the refrigerator for up to a week.)

Labor-less Labor Day Eats x Atlanta Plugged In

Summer isn't over yet!! I want to (air) scream this every time I cite a mention of Fall food and flavors these days.  Don't get me wrong, I loveeee the Fall.  It's my favorite season, in fact, but I'm all about celebrating each season to its fullest--and that means relishing the final days of Summer.

Just as Memorial Day marks the unofficial start of Summer, Labor Day tends to mark the unofficial end of this sultry time of year.  And with Labor Day in mind (and on the horizon), I have to share a few, fun recipes to make your entertaining over the long weekend anything but laborious.  Think effortless!

If you follow me on social media (I'd love it if you did--see the easy 'connect' buttons in the right margin. Shameless plug. ;-) ), then you're likely aware that I had the awesome privilege of returning to my favorite, Atlanta Plugged In, earlier this week to share my tips and recipes for making the most of the holiday.


Now that you've watched the segment, I hope you're inspired to try these easy, delicious, and, yes, healthy dishes.  Win, win, win.


And to tie it all together with a big bow on top, I'm sharing a bonus "recipe" in the way of a super fun and effortless sip.  Because there's so much to cheers to and be thankful for.

Peach Caprese Bites
Ingredients:
Fresh peaches, sliced into rounds
Fresh mozzarella, thinly sliced
Prosciutto, thinly sliced
Basil leaves
Flaked sea salt (optional)
Balsamic syrup, for garnish, (optional)

Method:
Arrange peaches, mozzarella, basil and prosciutto in stacks.  Sprinkle lightly with sea salt and drizzle balsalmic, if using.  Enjoy!

Roasted Shrimp and Pineapple Skewers
Ingredients:
Shrimp, peeled and deveined
Fresh pineapple
Old Bay Seasoning
Kosher Salt
Freshly ground black pepper
Olive Oil  
Brown sugar 
Cilantro
Fresh limes  

Method:
Preheat oven to 425 degrees F.

On a baking sheet, toss together shrimp, seasoning, a light sprinkling of salt, freshly ground pepper and olive oil.  Roast in preheated oven for 5-6 minutes.  Set aside.

On a separate baking sheet, toss together pineapple, brown sugar, salt, pepper and olive oil.  Roast for 15 minutes in preheated oven. (*Cook's Note: Shrimp and pineapple can be prepared a day ahead and served at room temperature, if preferred.)

Add roasted shrimp, pineapple and cilantro to skewers.  Garnish with more chopped cilantro and fresh lime juice.  Enjoy!

Watermelon with Chili-Spiced Salt
Ingredients:
Fresh watermelon slices or chunks
1 tablespoon kosher salt 
1/2 teaspoon chili powder 
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (or less, to taste)

Method:
Add salt and spices to a dish and stir well to combine.  Sprinkle over melon, serve and enjoy! (*Cook's Note: leftover salt can be stored in an airtight container in your pantry.)

Cotton Candy Sparkler
Ingredients:
Cotton candy
Sparkling drink of choice (cider, prosecco, champagne, etc.)

Method:
Pour sparkling beverage in glasses.  Top with cotton candy.  Toast and enjoy!

Creole-Spiced Shrimp and Polenta


Some dishes are made to bring pure, unadulterated joy.  For me, that usually entails bold, unforgettable flavors and some measure of comfort-food-esque, homey goodness.  This past weekend, that joy was realized in my kitchen, as it has been so many times before, as I brought together two of my favorite things: bold, creole flavored shrimp and creamy polenta (a slight twist on the beloved shrimp and grits).  

So first about the shrimp (they deserve their own homage).  As the undisputed star of the dish, along with its natural, rich, dark, spice and flavor laden juices, it couldn't be easier to prepare.  A simple assembly and toss of the majority of the ingredients, followed by an oven-bake of 30 minutes, yields perfectly cooked, scrumptious, bread-sopping (with or without the polenta) noshing--and makes this dish perfect for when you're looking to get dinner on the table in under an hour (read: busy weeknights or lazy weekends) or equally when looking to serve up a bit of wow-appeal to guests and fellow diners.  Easy, quick, and oh so good.  Got it?

When I first started making this dish, it was just me, those irresistible shrimp, crusty bread for sopping up those must-have juices that form while they're baking in the oven and (possibly) a mixed greens salad here and there.  Then one day not so long ago, it dawned on me that this would make the perfect marriage with a base of creamy, luscious polenta, similar to our Southern classic of shrimp and grits.  And wah-la, the rest was history. 

So as you continue to brave the cold, wintery days ahead, be sure to infuse your eats with a bit of uncontainable goodness and joy with this simple, yet satisfying, recipe.

Creole-Spiced Shrimp and Polenta
(Cook's Note: For the shrimp, you can use as much (or as little) of the spicier ingredients as you like to suit your palate.) 
A bit of pre-dinner mise en place

Ingredients:
Creole-Spiced Shrimp
Instant Polenta
Water (milk or broth, optional)
Salt

Method:
When shrimp has about 10 minutes or so left in the oven, bring a large pot of water to a boil. (Cook's Note: Use a ration of 3-parts liquid to 1-part polenta).
Once water has reached a boil, add in salt to flavor and then stir in polenta and stir continually until done (also following package instructions, as needed).  

Remove shrimp pouch(es) from oven.  Serve over polenta in individual servings or in a large family style serving platter.  Enjoy!

Link Love: A Southern Living Summer

While visiting my mom for Mother's Day weekend, I indulged in my usual habit of leafing through her decor and lifestyle magazines.  At some point along the way, I landed on a Southern Living issue that seemed to transport me right into the middle of Summer -- a scrumptious, mouth-watering, refreshing Summer to be exact.  

It's true that we eat with our eyes first. (At least that's true for me.)  And page after page presented recipes that spawned an inner excitement followed by the exclamation, "Oooh, I'm going to make that!"  It's the raw inspiration that keeps me excited about the joys of cooking and eating.

To make sure I could follow through on my new found excitement, I asked my mom if I could "borrow" her magazine and bring it home with me. :)  She graciously obliged and as the days of Summer unfold, I look forward to making many of the vibrant dishes that will make this one of the tastiest seasons yet.

Tastes of Spring

Now that Spring is here, I'm looking forward to the fresh and vibrant flavors that come alive during this time of year.  The bounty of fresh herbs, vibrant citrus and spring vegetables, to name a few, make for delicious and versatile fare that can be enjoyed all season long.

Although it's hard to name just one, two, or even three, of my favorite tastes of Spring, I am highlighting three recipes that resonate fresh, vibrant and versatile flavors and deliver Spring eating in all of its scrumptious glory!

HOW TO EAT: Shrimp

Similar to a painter's canvas that's open for interpretation, shrimp is a food that lends itself perfectly to the cook's tastes, easily taking on flavors, and can be enjoyed in seemingly endless preparations.  So, is there any wonder that questions about how to eat them exist?  Tail on? Tail off? With, or sans, knife and fork? By hand? And on and on they go.  

To help take the mystery out of proper noshing of this favorite ingredient, we're offering up the latest installment in our how to eat tutorials.  And to ensure you have the opportunity for lots of "practice", we're tossing in a couple of our favorite recipes for the best in shrimp eats.

Eating Shrimp
Cocktail shrimp are eaten with a seafood fork.  Eat large shrimp in two bites.  If the tails have been left on, hold the shrimp by the tail with your fingers.  Dip in sauce, bite off, and discard the tail.

Flavor Full: Creole-Spiced Shrimp

My love affair with bold flavors is no secret.  And when I spot a recipe like creole-spiced shrimp, I'm all over it.  In about the time it takes to preheat your oven, the ingredients come together to form the perfect pouch of flavor-full goodness, which made this the perfect quick and easy dinner on a recent weeknight.

My version was adapted from the original recipe from Bon Appetit, to accommodate the ingredients I had on hand, without missing any of the creole-spicy oomph that initially drew me to the recipe.  The shrimp are married with the flavors of Old Bay, Tabasco, Worcestershire sauce, shallots, bay leaves, lemon, salt and pepper, and finished with a little butter and water to form the most decadent bath and steaming juices for the shrimp.  (If you're a little gun-shy about the spiciness, not to fret; you can temper the ingredients to your personal spice comfort zone.)

Within a half hour, the foil pouch emerges from the oven to reveal shrimp that are cooked and seasoned to savory perfection, with lots of jus for added deliciousness.

Take it from this self-avowed 'Spice Girl', you want this recipe in your repertoire.

Now...onto Happy Eating!

Creole-Spiced Shrimp

Ingredients:
Shrimp, peeled and deveined
Shallot, sliced
Lemon, thinly sliced
Bay leaves
Worcestershire sauce
Tabasco
Old Bay seasoning
Kosher salt
Freshly ground black pepper
Butter

Method:
Preheat oven to 325 F.
 
Add shrimp and ingredients (except butter), to taste, to a bowlToss to combine.  

Place shrimp mixture inside a 16x12 in. square of heavy duty foil. (Recommended: 1/2 lb. shrimp per square of foil.)  Fold the edges of the foil toward the center, but don't seal. Top mixture with a pat of butter and two to three tablespoons of water.  Crimp edges tightly into a sealed pouch.

Place pouch(es) on a baking sheet and place in preheated oven.  Bake for about 30 minutes or until shrimp are thoroughly cooked.  Remove from oven and carefully open pouch to allow steam to escape, being careful not to allow the juices to escape.  Pour shrimp and jus into a serving dish and enjoy!

Shine Supper Club: Orzo Pasta Salad with Grilled Shrimp and Vegetables

I truly love the fresh and delicious flavors that welcome Spring into our kitchens and cuisine.  Fresh herbs, summer squash, zucchini, cherry tomatoes and peppers are just a few of the many tastes that make their way front and center into my cooking during this time of the year.  And that's why I was so excited to join in with Yahoo Shine Supper Club's April theme for Spring Cleaning My Supper!  In fact, that's exactly what happened recently when I decided to make a delicious pasta tossed with grilled vegetables and shrimp. 

A favorite dish for healthy, lite and delicious noshing, that constitutes a meal-in-one, this recipe was the perfect wind-down to my busy weekend.  With little more effort than chopping some vegetables, aromatics, and herbs, grabbing some shrimp from the freezer for a quick defrost ( I like to keep these on hand for quick and easy meals, like this), whisking up my favorite vinaigrette, and boiling the pasta, I was ready to chow down in a matter of minutes rather than hours.  I was pleased to sit down to 'fast food' that wasn't an assault on my waistline and wouldn't leave me murmuring, "why did I just eat that?".

This recipe is simple, yet it offers the best of flavors we love, especially as the days become longer and lighter fare is in order.  It's pasta salad 'elevated' with the use of the often overlooked orzo variety that's frequently mistaken for rice at first glance.  Cooked to al dente perfection, then dressed with the vinaigrette to give it extra savory punch and finally tossed with the grilled vegetables and shrimp and garnished with fresh dill, this is one dish you'll want to keep close at hand for long days and busy nights.  It's also great for picnic and bbq fare when the weekend beckons us to enjoy dining al fresco.



By now, it's obvious that I'm a fan. And when it's this easy, quick, delicious--and perfect for Spring--there's no reason not to be.

So here's to Spring Cleaning Your Supper....and Happy Eating!

Orzo Pasta Salad with Grilled Shrimp and Vegetables

Ingredients: 
1 pound of orzo pasta
Bell peppers, chopped (recommended: red, orange or yellow)
Summer squash, sliced
Zucchini, sliced
Cherry tomatoes, halved
1 red onion, chopped
2-3 tablespoons fresh dill, finely chopped
Shrimp, peeled and deveined
Kosher salt
Freshly ground black pepper
1 recipe for champagne vinaigrette

Instructions:
Pre-heat grill (or grill pan)
Prepare vinaigrette and set aside 
Bring a large pot of water to a boil

Season vegetables, except for tomatoes, with salt and pepper and lightly coat with some of the vinaigrette.  Place on the pre-heated grill and grill until lightly cooked through, but still somewhat firm in texture.  Remove from grill and set aside.

Repeat with shrimp, seasoning and grilling until shrimp are light pink. (Be careful not to overcook!)

Season boiling water with salt and add in pasta.  Cook according to package instructions for al dente doneness.  Drain pasta and pour remaining vinaigrette onto warm pasta.  Add in the grilled vegetables, shrimp and tomatoes and toss to combine.  Finish with a garnish of fresh dill.

Serve warm, room temperature or chilled.  Enjoy!

The Perfect Bite: Roasted Shrimp Cocktail

When I think of a versatile bite, shrimp definitely tops the list.  Whether it's shrimp-n-grits, shrimp scampi, classic fried shrimp, shrimp gumbo, or some other favorite preparation, there is seemingly no end to the many interpretations that this succulent ingredient can take on.  In fact, one of the most universal shrimp dishes would have to be the beloved shrimp cocktail.  

Perfect for entertaining and feasting, alike, shrimp cocktail needs no introduction, but my slightly rustic spin just might.  Departing from the traditional preparation, this rendition serves up what we love most about cooking: an easier method (if that's possible!) that's laden with even more flavor possibilities.  Roasted shrimp--served cocktail style--is a delicious revelation that you'll relish again and again.  And when something is this simple and good, why not?

Roasted Shrimp Cocktail

Ingredients:
Raw shrimp, peeled and deveined (but with tail intact)
Olive oil
Seasoned salt or kosher salt
Freshly ground black pepper
Garlic powder
Freshly squeezed lemon juice
Cocktail sauce
Lemon wedges for serving

Preheat oven to 425 degrees F.

Line a rimmed baking sheet with foil.  Place shrimp on baking sheet, drizzle with oil and season to taste with salt, pepper and garlic.  Toss together to coat well and roast in heated oven for 5-6 minutes.  Remove shrimp from oven and dress with lemon juice.  Serve warm or at room temperature, accompanied with cocktail sauce for dipping and lemon wedges.  Enjoy!

*Cook's Note: Experiment with different spice and flavor combinations such as paprika, cumin, cayenne pepper, or whatever tastes you especially enjoy.  Just remember to go lightly so that the flavors don't overpower the delicate shrimp.
